Anybody know if there is a good way to measure the force between two
impacting bodies directly by using a load cell? In the past we've used
accelerometers with F=ma, but accelerometers have some problems we need
to reference against an independent measurement.

It isn't with a load cell directly, but there are some pressure indicative
films that can show what the maximum pressure is between two surfaces. That
might get you close to what you need without the problem of polling times
and rapid events.
